- Description: Jok, khao man gai, kai luak, sai kua. Four things a Thai eats every single morning, all of them within a hundred metres of each other, and all of them better than your hotel breakfast.

There is a shop near me that opens at four in the morning and by the time I get there at seven there is a line of fourteen people who have been awake since five, and the entire line is silent, and the woman at the front has been making the same three things for twenty years.

That is Thai breakfast. It is not a category, it is four dishes and a queue.

## Jok, which is the thing to have

**Rice porridge, and it is not the sweet breakfast porridge you know.** This is a savoury, thick, properly seasoned rice porridge, and the seasoning is the entire point.

**It comes with a set of toppings that you choose from at the counter,** and the order in which a Thai person assembles it is worth copying: ginger, then fried garlic, then soy sauce, then [chilli](https://easythailandvisa.com/thai-chilli-heat-and-how-to-eat-spicy-food/), then a spoon of the deep-fried shallots, then the pepper. You build the bowl yourself and every one of those steps is required.

**Ask for *khai* for a poached egg dropped into it,** which is the default for a reason and which turns the bowl into a better bowl. Ask for *moo* for pork, *tao* for dried fish, or nothing at all if you want to taste the base version.

**And it costs almost nothing,** which is the other reason the queue is fourteen people long.

## Khao man gai, which is the same shop's other product

**Poached chicken over rice with a bowl of soup,** and it is the most perfectly executed everyday dish in the country.

**The chicken is poached gently in stock with ginger and the rice is cooked in the same liquid,** which is why it tastes the way it does, and the whole thing is the kind of dish that cannot be improved by a fancier version.

**You choose the sauce,** and the choice is at the counter: the pale soy and garlic dipping sauce, or chilli and garlic and vinegar, or both, and everybody gets both.

**Order *kin* and you get rice, *rohb* is half, *lo* is a leg, *hor* is the liver, and the offal versions are the correct order if you have not had them.**

**It is also the single most reliable lunch in Thailand for the same reasons, and you will eat it repeatedly and it will not bore you.**

## **Kai luak, which is not a dish so much as a technique**

**Eggs dropped into hot oil, which puff into round golden parcels, and there is a whole category of them: *luak* plain, *luak rot* with a filling of pork and shrimp, *luak nam pla* steamed in a** [**fish sauce**](https://easythailandvisa.com/thai-seafood-pla-tha-and-fish-sauce/) **broth.**

**They are the fastest possible breakfast, they are eaten standing up on the street, and they are the best thing in the country for a two baht bet on whether the oil is hot enough.**

**Look for a basket of them on the counter, and if they look pale and deflated, walk on.**

## **Sai kua sai ua, which is the weekend version**

**Sausages with a sweet, seasoned pork filling, grilled and eaten in a wrap or on their own, and they are available everywhere but they are a proper market breakfast rather than a weekday one.**

**Two of them with a glass of soy milk and a bag of *khong* is a full breakfast for a few baht and is the thing I would feed somebody to convince them they had not yet seen Thai food.**

## **How to find a good one**

**The queue is the test. A shop with a queue at seven in the morning is making food that people have chosen, and the turnover means everything is fresh and nothing is sitting.**

**The look of the place is the second test. A good jok shop is stainless steel, steamy, slightly chaotic, and has a woman working fast with a very large pot. A bad one has a glass front and a menu in English.**

**And eat it there. Jok is not a takeaway food in the way people assume; it is at its best in the bowl, in the shop, sitting down on a plastic stool, with the toppings you assembled yourself.**

## **What it is not, which matters**

**Hotel breakfast in Thailand is not a thing worth getting up for unless you are staying somewhere specifically known for it, and the continental option is a poor use of a morning in a country with this available for a handful of baht on the corner.**

**And Thai breakfast is not one national dish. It is regional, like everything else here, and the** [**Isan**](https://easythailandvisa.com/thai-regional-food-isan-north-south/) **version of almost all of this is sharper and has more chilli. If you are in the northeast, ask.**

**Which is the general principle of this entire blog: the version of the thing made for the people who live there, at six in the morning, before any of this was for you, is almost always the better version, and it is almost always cheaper.**
